Ingredients
1/2lbboneless skinless chicken thighs(If you prefer white meat, you can use chicken breast, but you will need to cut it into thigh size pieces to keep the cooking time the same.)
Place 1/2 lb boneless skinless chicken thighs in the bottom of a 3 or 4 Quart Crock Pot.
Sprinkle 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoons cumin and salt and pepper to taste on top of the chicken.
Layer 1 cup frozen green beans on top of your meat, followed by 1/2 cup fresh sliced white mushrooms and 1/3 bell pepper (seeded and sliced).
Sprinkle lightly with salt and pepper again, and place 1 1/2 tablespoons butter (cut into pats) across the top.
Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
Once your chicken is done, place on a plate or in a bowl and shred with two forks. Return the chicken to the crock pot and tear 3 slices pepper jack cheese into pieces. Cover and turn the crock pot on high, if it isn't already, and wait approximately 5 minutes for the cheese to melt. Once the cheese is melted, it is ready to serve.
