How to Make Pepper Jack Chicken for Two in a Crock Pot

If you are new to cooking and the list of ingredients and/or the recipe for this Crock Pot Pepper Jack Chicken for Two seems a bit intimidating, trust me, you can do it. When I was new to cooking, I was terrified of most all recipes. This one would have definitely had me thinking that I could not do it. However, if you take a breath and read through the recipe slowly, following the instructions one at a time, I promise you that you can do this. It really is not as hard as it looks, and the resulting meal is absolutely amazing. I hope you will try it.

What You Will Need for Crock Pot Pepper Jack Chicken for Two
Ingredients Needed
- 1/2 lb boneless, skinless chicken thighs (If you prefer white meat, you can use chicken breast, but you will need to cut it into thigh size pieces to keep the cooking time the same.)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 cup frozen green beans (I used Italian style frozen green beans, but you can use your favorite style of frozen green beans.)
- 1/3 bell pepper seeded and sliced
- 1/2 cup sliced white mushrooms
- 1 1/2 tablespoons butter, sliced
- 3 slices pepper jack cheese, torn into pieces
Equipment Needed
- Measuring spoons
- Sharp knife
- Cutting board
- Measuring cups
- 3 Quart Crock Pot or 4 Quart Crock Pot
- Bowl or plate
- 2 forks
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly
- Shredding of Chicken: 5 minutes
- Cooking Time: approximately 5 minutes on high to melt the cheese

Crock Pot Pepper Jack Chicken for Two
Ingredients
- 1/2 lb boneless skinless chicken thighs (If you prefer white meat, you can use chicken breast, but you will need to cut it into thigh size pieces to keep the cooking time the same.)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoons cumin
- salt and pepper to taste
- 1 cup frozen green beans kept frozen
- 1/3 bell pepper seeded and sliced
- 1/2 cup fresh sliced white mushrooms
- 1 1/2 tablespoons butter sliced
- 3 slices pepper jack cheese
Instructions
- Place 1/2 lb boneless skinless chicken thighs in the bottom of a 3 or 4 Quart Crock Pot.
- Sprinkle 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoons cumin and salt and pepper to taste on top of the chicken.
- Layer 1 cup frozen green beans on top of your meat, followed by 1/2 cup fresh sliced white mushrooms and 1/3 bell pepper (seeded and sliced).
- Sprinkle lightly with salt and pepper again, and place 1 1/2 tablespoons butter (cut into pats) across the top.
- Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
- Once your chicken is done, place on a plate or in a bowl and shred with two forks. Return the chicken to the crock pot and tear 3 slices pepper jack cheese into pieces. Cover and turn the crock pot on high, if it isn't already, and wait approximately 5 minutes for the cheese to melt. Once the cheese is melted, it is ready to serve.
