How to Make Ranch Chicken and Green Beans for Two in a Crock Pot

I decided to take one of our family favorite crock pot recipes and try it out with two servings. As I expected, this Ranch Crock Pot Chicken and Green Beans for Two did not disappoint! It is incredibly easy to throw together and has such a delicious flavor. I also love that the green beans cook up right in the same crock pot at the chicken. The ranch flavor goes so well with both the chicken and the green beans, and, as an added bonus, less dishes for me to do once we have enjoyed this wonderful dish!
When you look at the ingredient list, you will see that the can of green beans is half drained. The reason for this is because the original recipe called for two cans of green beans with one drained. I drained half the liquid out to keep the liquid ratio about the same. If you want more liquid in your recipe, feel free to not drain your green beans. What You Will Need for Ranch Crock Pot Chicken and Green Beans for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs, cut into bite size cubes
- 14.5 oz can Italian green beans, with half of the juices drained from the can
- 1 tablespoon ranch dip mix
- 1 tablespoon butter, sliced into thin pats
Equipment Needed
- Sharp knife (I love my Rada knives.)
- Cutting board
- Can opener
- Measuring spoon
- 2.5 quart slow cooker to 4 quart slow cooker
- Wooden spoon
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 hours on low or 1 hour on high, stirring once or twice during cooking time

Ranch Crock Pot Chicken and Green Beans for Two
Ingredients
- 2 boneless skinless chicken thighs cubed
- 14.5 oz Italian Cut Green Beans with half of the juices drained from the can
- 1 tablespoon ranch dip mix
- 1 tablespoon butter sliced into thin pats
Instructions
- Place your cubed chicken in the bottom of a 2.5 quart to 4 quart slow cooker.
- Pour your green beans on top of your chicken.
- Sprinkle the ranch dip mix over everything and stir until well combined.
- Place slices of butter evenly on top.
- Cover and cook on low for 2 hours or high for 1 hour, stirring occasionally.

Are the chicken thighs PRECOOKED before starting?

I did not cook the cubed chicken before putting them in the crock pot. I just cut the raw chicken thighs into cubes and put them in the crock pot. Since they are such small pieces and there isn’t a large quantity of them, they cook up very quickly. I hope you enjoy this as much as we do!
