I have quite the treat for you, dear readers, today! This Crock Pot Mississippi Shredded Chicken for Two is not only adapted from a reader favorite recipe but also a family favorite recipe. The flavor of this dish is absolutely wonderful. Even better, this recipe is simple to make and cooks quickly.

This chicken is served over a bed of rice. You can use your favorite rice. However, if you are not sure what rice to use, I highly recommend using long cooking basmati rice. It is easy to make, tastes great with this dish and has a really good texture.

What You Will Need for Crock Pot Mississippi Shredded Chicken for Two

Ingredients Needed

  • 2 large, boneless, skinless chicken thighs
  • 1.5 teaspoons ranch dip mix
  • 1.5 teaspoons brown gravy mix
  • 3 teaspoons butter, sliced into pats
  • 2 pepperoncinis
  • White rice, prepared

Equipment Needed

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, rotating your insert halfway thought the cooking time, if your slow cooker does not cook evenly

    Ingredients

    Instructions

    • Put 2 large boneless skinless chicken thighs in the bottom of your 2.5 quart, 3 quart or 4 quart slow cooker.
    • Sprinkle 1 1/2 teaspoons ranch dressing mix and 1 1/2 teaspoons Brown Gravy Mix on top.
    • Cut 3 teaspoons butter into pats and place on top.
    • Add 2 Pepperoncinis.
    • Cook on low for 3-4 hours or 1.5-2 hours on high. Stirring half-way through.
    • Take two forks and shred your chicken in the crock pot.
    • Serve over a bed of Cooked white rice with cooking juices spooned over top.
