In a large skillet, heat 1 tablespoon extra virgin olive oil over medium high heat and add in the smoked sausage slices, minced garlic and diced onion and sauté for 5 minutes browning the sausage slices.
Pour everything from the skillet into a 6 quart slow cooker.
Add 19 oz frozen tortellini (kept frozen), 14.5 oz can diced tomatoes and 2 cups chicken broth to the slow cooker and stir until well combined.
Cover and cook on low for 2 to 2.5 hours or high for 1 hour to 1 hour and 15 minutes, until tortellini reaches desired tenderness, stirring halfway through the cooking time.
Serve with a slotted spoon and sprinkle with Shredded Parmesan.
