Put 1/2 lb strawberries (washed, sliced thin and reserve 2 strawberries for garnish), 1/4 cup sugar, 1 /2 cup steel cut oats , 1 cup milk, 3/4 cups water and 1/2 tablespoon vanilla extract in a heat safe mixing bowl that will fit in your 4 Quart Crock Pot's insert and stir until well combined.
Cube 4 oz cream cheese (half of an 8 oz block) and place evenly in the bowl.
Put water in your insert, and place the bowl with the ingredients in the water. If the water comes up higher than halfway up the side of the bowl, remove some water until the water is just below halfway up the side of the bowl.
Cover and cook on low for 8-10 hours.
Stir well before serving.
Take the 2 reserved strawberries, wash and slice them and serve oatmeal with strawberry slices on top.
