Sift 1 cup all purpose flour and 1/4 teaspoon salt into a medium mixing bowl.
Make a well in the middle of your flour mixture.
Add 2 large eggs and 1 1/4 cup milk a little at a time while stirring with a whisk until your batter is smooth.
Place batter in your refrigerator for 30 minutes.
Preheat your 22 inch Blackstone griddle on low, drizzle some oil on the Blackstone, put on a heat resistant glove and use paper towels to evenly spread the oil across the surface.
Gently stir your batter to make sure everything is still well combined and use a 1/4 cup measuring cup to dip the batter and pour it onto the Blackstone. (I could fit about 3 at a time.)
Cook for around 2 minutes until edges are set and flip.
Cook second side for about a minute or so until set.
Repeat cooking steps for all of the batter.
Serve with your favorite crepe toppings.
