Combine 32 oz frozen diced potatoes, 1 small yellow onion (diced), 32 oz chicken broth and 1 cup water in a 6 Quart Slow Cooker.
Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
In a bowl, mix together 3 tablespoons all-purpose flour, salt and pepper1 cup milkpour into your crock pot and stir until well combined.
Cover and cook on high for 30-45 mins, until your soup has thickened to desired consistency
Sprinkle 4 cups Cheddar cheese on top of your soup and stir until your cheese melted.
Serve with 1 lb bacon, cooked crisply and crumbled and chopped green onions on top, if desired.
