This Easy Crock Pot Cheesy Potato Soup really is super easy since it uses frozen diced potatoes. One thing that I love about this recipe is that I do not have to peel and dice potatoes. It just saves so much time! Another great thing is that this soup cooks up quickly since it is using diced potatoes. As if that isn’t enough, this recipe also tastes great!

I just wanted to make a quick little note about my experience with cheese in this recipe. When I have made this recipe with generic shredded cheese, it melted pretty quickly and blended very well. However, when I used name brand cheese, it took longer quite a bit longer to melt completely. Don’t get me wrong. I love me some name brand cheese. There is just something about a good cheese pull when you are eating or serving up a dish. However, it does take a little longer for it combine completely into the soup. Either way, you will have a delicious soup.

What You Will Need for Easy Crock Pot Cheesy Potato Soup

Ingredients Needed

  • 32 oz frozen diced potatoes, kept frozen
  • 1 small yellow onion, diced
  • 32 oz chicken broth
  • 1 cup water
  • 3 tablespoons all purpose flour
  • salt and pepper to taste
  • 1 cup milk
  • 4 cups shredded mild cheddar cheese
  • 1 lb bacon, cooked crisp and crumbled, garnish
  • Chopped green onion, garnish

Equipment Needed

  • Sharp knife
  • Cutting board
  • Measuring cups
  • Measuring spoon
  • Medium mixing bowl
  • Stirring spatula
  • 6 Quart Slow Cooker
  • Skillet, griddle or Blackstone (for cooking bacon)

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, plus an additional 30 to 45 minutes on high

  • Combine 32 oz frozen diced potatoes, 1 small yellow onion (diced), 32 oz chicken broth and 1 cup water in a 6 Quart Slow Cooker.
  • Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
  • In a bowl, mix together 3 tablespoons all-purpose flour, salt and pepper1 cup milkpour into your crock pot and stir until well combined.
  • Cover and cook on high for 30-45 mins, until your soup has thickened to desired consistency
  • Sprinkle 4 cups Cheddar cheese on top of your soup and stir until your cheese melted.
  • Serve with 1 lb bacon, cooked crisply and crumbled and chopped green onions on top, if desired.
