Place 24 oz petite gold potatoes (washed), 16 oz bag baby carrots, 6 ribs celery (washed and sliced) and 1 medium yellow onion (washed and quartered) in the bottom of a 6 quart crock pot.
Season with Salt and Pepper to taste
Place 2 lbs boneless, center cut pork chops on top of your veggies and sprinkle your 1 oz brown gravy packet on top.
Pour 1 Cup chicken broth and 1/2 Cup cooking sherry (or additional broth) over everything.
Cook on low for 5-6 hours or high for 2.5-3 hours, for most tender results, cook on low.
