SugarOptional for sprinkling on top of the muffins
Instructions
Preheat your oven to 400 degrees Fahrenheit.
In a large mixing bowl, mix together 1 cup all purpose flour, 3 tablespoons sugar, 1/4 teaspoon salt and 2 teaspoons Baking Powder with a whisk until well combined .
Place your rinsed 1 cup Fresh Blueberries in a small mixing bowl, sprinkle with 1 tablespoon of your dry ingredients mixture and gently toss until all the blueberries are coated, set aside.
Add 3 tablespoons butter (melted), 2 tablespoons plain Greek yogurt, 1 large egg, 2 teaspoons vanilla extract and 1/3 cup milk to your dry ingredient mixture and stir with a stirring spatula until well combined.
Fold your coated blueberries into the batter.
Spoon your blueberry muffin batter into muffin liners. You will want the cups to be half to three quarters full.
If desired, sprinkle a little bit of Sugar on top of each muffin.
Bake muffins for 10 minutes, check to see how they are doing and turn muffin tins, if needed, and bake for an additional 5 to 10 minutes. They are done when the muffins pass the toothpick test.
