How to Make Easy Homemade Blueberry Muffins in an Oven

If you are wanting something delicious for breakfast that is pretty simple to make, I highly recommend these Easy Homemade Blueberry Muffins. They are made from scratch but are not hard at all. I could have made these back when I was terrified of cooking and baking. They are that easy.

Any time I have folding in a recipe, I always think of a TV show that had two characters who are completely confused by what “folding” something means. So, I thought I would explain. When I say to fold in the blueberries, all I mean is to take the batter from the outside and gently put it over the top of the blueberries in the middle, and then gently fold (aka stir VERY gently) the outside to the middle until the blueberries are well distributed throughout the batter.

What You Will Need for Easy Homemade Blueberry Muffins

Ingredients Needed

  • 1 cup all purpose flour
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup fresh blueberries, rinsed
  • 3 tablespoons butter, melted
  • 2 tablespoons plain Greek yogurt
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup milk
  • Optional: additional sugar for sprinkling on top of muffins

Equipment Needed

Time Needed

  • Prep Time: 10 minutes, plus however many more minutes it takes for your oven to reach 400 degrees Fahrenheit
  • Cooking Time: 15 to 20 minutes, rotating your muffin tins halfway through the cooking time if your oven does not cook evenly, until the muffins can pass a toothpick test

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a large mixing bowl, mix together 1 cup all purpose flour, 3 tablespoons sugar, 1/4 teaspoon salt and 2 teaspoons Baking Powder with a whisk until well combined .
  • Place your rinsed 1 cup Fresh Blueberries in a small mixing bowl, sprinkle with 1 tablespoon of your dry ingredients mixture and gently toss until all the blueberries are coated, set aside.
  • Add 3 tablespoons butter (melted), 2 tablespoons plain Greek yogurt, 1 large egg, 2 teaspoons vanilla extract and 1/3 cup milk to your dry ingredient mixture and stir with a stirring spatula until well combined.
  • Fold your coated blueberries into the batter.
  • Spoon your blueberry muffin batter into muffin liners. You will want the cups to be half to three quarters full.
  • If desired, sprinkle a little bit of Sugar on top of each muffin.
  • Bake muffins for 10 minutes, check to see how they are doing and turn muffin tins, if needed, and bake for an additional 5 to 10 minutes. They are done when the muffins pass the toothpick test.
