How to Make Pesto Lemon Pepper Chicken Legs in a Crock Pot
Aunt Lou here.
We have really fell in love with pesto in this house. I had not even tried it until a year or so ago. As a picky eater, the look of it had me a little nervous to try it, but once I gave it a try, I absolutely loved it! Ever since then I have really enjoyed trying different recipes with pesto. So, I knew I wanted to try out these Pesto Lemon Pepper Crock Pot Chicken Legs. The flavor is wonderful!
This recipe is so easy to put together, and doesn’t it look fancy! 😉 If you do not have a juicer for your lemons, it is okay. While a juicer would make the prep work easier, it is not a requirement. I have a juicer, but, for the life of me, I could not find it the day I was making this! So, if you do not have a juicer, you can just roll the lemons with a little bit of pressure to help make them easier to squeeze. Then you will cut them in half and squeeze the juice from each half into a cup or small bowl. I recommend doing this instead of just squeezing the juice directly onto the chicken, because the seeds can come out when you are squeezing the lemons. Then you can remove the seeds, if they came out of the lemon, and evenly pour the juice over your chicken. Easy peasy!
