How to Make Pesto Tomato Soup in a Crock Pot

Ever since I first tried Easy Crock Pot Tomato Soup, it became my favorite tomato soup. (You can find the stove top version of the recipe here.) However, Cris told me I needed to try one of her favorite Pesto Tomato Soup recipes out in the crock pot. The results were incredible. Seriously, the flavor was amazing, and it was so easy to make. I now have two favorite tomato soup recipes because they are both delicious. The picky-eater in my house even asked if I would make it again the next day because she loved it so much.

We are often asked for recipes with fewer portions, and this one fulfills that request. However, if you have more than 4 people to feed or want more leftovers, you can easily double or triple this recipe. You will just want to adjust the size of crock pot you use and watch the timing closely to adjusted it as needed.

For this recipe, to make it smooth, you will need an immersion blender. I didn’t have one before I planned on making this recipe. I found one this one with good reviews, and it worked perfectly for this soup. It blended this soup quickly, right in my insert. I love being able to make a delicious recipe without dirtying too many dishes!

What You Will Need for Crock Pot Pesto Tomato Soup

Ingredients Needed

  • 14.5 oz can basil, garlic and oregano diced tomatoes, undrained
  • 10.5 oz can condensed tomato soup
  • 1 cup milk
  • 3 tablespoons pesto sauce

Equipment Needed

Time Needed

  • Prep Time: 5 minutes or less
  • Cooking Time: 1 to 1.5 hours on high or 2 to 3 hours on low, until everything is heated through, stirring halfway through cooking time
  • Additional Time: 2 minutes to make the soup smooth

Ingredients

  • 14.5 oz Diced Tomatoes with Basil, Oregano and Garlic undrained
  • 10.5 oz can tomato soup
  • 1 cup milk
  • 3 tablespoons pesto sauce

Instructions

  • Pour all your ingredients into a 2.5 quart slow cooker and stir until well combined.
  • Cover and cook on high for 1-1.5 hours or low for 2-3 hours, until everything is heated through, stirring halfway through cooking so it doesn't stick to the sides.
  • Once everything is heated through, use an immersion blender to blend the soup to desired smoothness.
