This Chicken Rice Harvest Soup recipe is the stove top version of one of my family’s favorite crock pot soups. It is packed full of flavor!

How to Make Chicken Rice Harvest Soup on a Stove Top

My family devoured this Chicken Rice Harvest Soup the first time I made it in the crock pot. (You can find the crock pot version of the recipe here.) As soon as all the leftovers were gone, they asked me to make it again. It has become a family favorite here. With it being so loved in my house, I thought I would try to make it on my stove top so I would have more options for cooking it, and so will you! The results were just as delicious as when making it in the crock pot. It is so yummy.
If you are new to cooking, this recipe might seem a little intimidating with the long ingredient list, but don’t worry. You can totally make this recipe. It is actually fairly easy if you just take it one step at a time. Once you have tried it, I am sure it will be a favorite for you and your loved ones!
What You Will Need for Chicken Rice Harvest Soup
Ingredients Needed
- 32 oz chicken broth
- 10.5 oz can cream of mushroom soup
- 4 cups water
- 1.5 lbs boneless, skinless chicken thighs
- 4 ribs of celery, sliced
- 3 green onions, chopped
- 1 1/2 cups sliced baby carrots
- 8 oz sliced mushrooms
- 1 teaspoon dried garlic
- 1 cup long grain, long cooking rice (I used Basmati rice.)
- Salt and pepper to taste
Equipment Needed
- Can opener
- Measuring cups
- Sharp knife
- Cutting board
- Measuring spoon
- Wooden spoon
- Large pot with lid
- Two forks (optional)
- Medium size mixing bowl
Time Needed
- Prep Time: 20 minutes
- Cooking Time: Approximately 1 hour

Chicken Rice Harvest Soup
Ingredients
- 32 oz chicken broth
- 10.5 oz Can Cream of Mushroom Soup
- 4 cups water
- 1.5 lb boneless skinless chicken thighs
- 4 ribs celery sliced
- 3 green onions chopped
- 1.5 cups sliced baby carrots
- 8 oz package sliced mushrooms
- 1 teaspoon dried garlic
- 1 cup long grain long cooking rice (I used basmati rice.)
- Salt and Pepper to taste
Instructions
- Bring your broth, water and cream of mushroom soup to a boil.
- Add your chicken, reduce heat and simmer for 30 minutes, until your chicken is tender.
- Remove your chicken and place it in a bowl, set aside.
- Put your celery, green onions, garlic and mushrooms in your pot and simmer for about 10 minutes.
- Add your carrots and rice to your pot, stir for 1 minute, cover and let it simmer for 20 minutes.
- While your pot is simmering, cut your chicken into bite size pieces or shred with two forks into bite size pieces, whichever you prefer.
- Once your 20 minutes is up, remove your lid, add your chicken back to the soup, stir and serve.
