How to Make Chicken Gnocchi Soup in a Crock Pot

We had a reader ask for a copycat recipe of Olive Garden’s Chicken Gnocchi Soup. The only problem is that I have never had this soup, so I did not have a way to know if I had made this recipe to match the restaurant version. However this Crock Pot Chicken Gnocchi Soup is really good, so I hope it will be enjoyed by everyone.
I am usually more of a dump and go kind of gal. I am quite the fan of quick and easy recipes. However, there are times where a little bit of prep is worth it. This recipe is one of those times. It may take more than 10 minutes to prepare, but this is still an easy recipe. So, don’t be scared off by the steps, time or ingredient list. Anyone can make this, and the end product is delicious!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken
- 1/2 cup onion, diced
- 1 cup celery, sliced
- 1 cup baby carrots, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried parsley flakes
- 1 teaspoon thyme
- 4 cups chicken broth
- 2 cups milk
- 1 tablespoon corn starch
- 2 tablespoons cold water
- 1 cup fresh spinach, chopped
- 16 oz pkg potato gnocchi
- salt and pepper to taste
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Large serving spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 20 minutes
- Cooking Time: 3 to 4 hours on low or 1.5 to 2 hours on high with an additional 30 minutes on high after adding the cornstarch and milk and another 15 minutes on high after adding the gnocchi and spinach.

Crock Pot Chicken Gnocchi Soup
Ingredients
- 2 lbs boneless skinless chicken cubed
- 1/2 cup onion diced
- 1 cup celery sliced
- 1 cup baby carrots sliced
- 2 cloves garlic minced
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 4 cups chicken broth
- 2 cups milk
- 1 tablespoon corn starch
- 2 tablespoons water
- 1 cup baby spinach chopped
- 16 oz potato gnocchi
- Salt and Pepper to taste
Instructions
- Put your onion, garlic, celery, carrots, seasonings, broth and chicken in a 6 quart slow cooker and stir until well combined.
- Cover and cook on low for 3 to 4 hours or high for 1.5-2 hours.
- Mix together your water and cornstarch in a cup or small bowl until completely combined.
- If your crock pot is not already on high, turn it on high and add cornstarch mixture and milk to your crock pot and stir until well combined.
- Cover and cook for an additional 30 minutes.
- Stir in gnocchi and chopped spinach, cover and cook on high for additional 15 minutes until gnocchi is cooked and spinach is wilted.
