Crock Pot Chicken Florentine Soup
Ingredients
- 2 lbs boneless, skinless chicken cubed
- 2 tablespoons butter sliced
- 8 cloves garlic minced
- 8 cups chicken broth
- 10 oz bag baby spinach
- 2 cups heavy whipping cream
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- fresh grated Parmesan cheese garnish
Instructions
- Put all your ingredients, except your baby spinach in your 6-quart crock pot
- Cover and cook on low for 3-4 hours or high for 1.5-2 hours, stirring occasionally
- Stir in your baby spinach with 15-30 minutes to go in cooking and cover, it is done when your spinach is wilted and your chicken is cooked to proper internal temperature
- Top with fresh grated Parmesan cheese, if desired
