  • Put all your ingredients, except your baby spinach in your 6-quart crock pot
  • Cover and cook on low for 3-4 hours or high for 1.5-2 hours, stirring occasionally
  • Stir in your baby spinach with 15-30 minutes to go in cooking and cover, it is done when your spinach is wilted and your chicken is cooked to proper internal temperature
  • Top with fresh grated Parmesan cheese, if desired
