How to Make Low Carb Strawberry Shortcake in a Slow Cooker

Ever since I shared our Low Carb Air Fryer Strawberry Shortcake, I have been meaning to get the crock pot version on the site.
I make this basic recipe all the time when we have family or friends over for dinner. I have made it in the air fryer, oven and in the crock pot. And, truth be told… a lot like our Low Carb Coffee Cake, I prefer the texture of this shortcake when I make in in the slow cooker. I love how the crock pot keeps the cake fluffy and moist.
Notes on Crock Pot Low Carb Strawberry Shortcake
- For best results, prepare strawberries the day before and refrigerate to release juices. This is not absolutely necessary but it does produce the most strawberry juice for the shortcake.
- You can make this shortcake with any 6 quart slow cooker. Cooking times will vary greatly depending on how your slow cooker cooks.
- We used CarbQuik in our shortcake dough to cut the carbs in this dish.
- Confectioner’s Sugar Substitute is a key ingredient in this dish to help add sweetness without adding a gritty texture.
- If you are not interested in low carb, you can use Bisquick’s shortcake recipe and make it into crock pot shortcake instead.

Crock Pot Low Carb Strawberry Shortcake Recipe
Crock Pot Low Carb Strawberry Shortcake
Ingredients
Strawberry Topping
- 1 pint strawberries sliced
- 1/2 cup confectioner's sugar substitute
Shortcake
- 2 tablespoons butter melted
- 2 cups CarbQuik
- 1/4 cup butter cold, cubed
- 1/2 cup confectioner's sugar substitute
- pinch salt
- 2/3 cup water
- garnish: sugar free whipped cream
Instructions
- In a large bowl, combine the strawberries with 1/2 cup of the sugar substitute.
- Smash several strawberries against the bowl to aid the strawberries in beginning to produce their juices.
- Set aside and stir occasionally to keep strawberries producing juices. (See note about best results)
- Spread melted butter inside crock.
- In another bowl, combine the Carbquik with the cold butter, fully working the mix into the butter. (I often use my hands to work it together.)
- Mix in the sugar substitute and salt.
- Add water to form a dough.
- Press dough into buttered crock.
- Cook on high for 45 min to 3 hours (depends on how hot your slow cooker cooks) until center sets.
- Cool for 30 min before cutting into 8 pieces.
- Serve pieces topped with strawberries and sugar free whipped cream.
