How to Make Low Carb Coffee Cake in a Slow Cooker

I have always LOVED coffee cake. So when I discovered Carbquick (a low carb biscuit mix that you can use similarly to bisquick) I began trying to replicate my favorite coffee cake I used to make prior to going low carb.
I have been making versions of this recipe in the oven for years but recently decided to try it in my crock pot and I will always make it in my crock pot from now on. I absolutely LOVE the results of this cake in my slow cooker. It produces a fluffier cake that retains its moisture far better than its oven counterpart.

Low Carb Crock Pot Coffee Cake Notes
- We used our 6 quart Ninja Slow Cooker for this cake and it comes out perfectly every time (We make this often!).
- While you can make this in the Casserole Crock, I have found that the results are much better in a traditional 6 quart slow cooker or Ninja Multi-Cooker.
- Carbquick is our base in this recipe. We buy it in bulk off of amazon.
- Flavor-wise, we prefer to use Sukrin and Sukrin Gold as our sugar and brown sugar substitutes.
- All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed. This is especially true when using your slow cooker to bake.

Low Carb Coffee Cake Recipe

Low Carb Crock Pot Coffee Cake
Ingredients
- 2 tablespoon butter melted
Cake Ingredients
- 2 cups CarbQuick
- 1/3 cup Sugar Substitute
- 1/2 teaspoon salt
- 2/3 cup water
- 1 egg
Topping Ingredients
- 2/3 cup Brown Sugar Substitute
- 1/3 cup CarbQuick
- 1 teaspoon Cinnamon
- 1/4 cup Butter Cold and Cubed
Instructions
- Coat the inside of a 6 quart slow cooker with the melted butter.
- In a mixing bowl, combine the cake dry ingredients (carbquick, sugar substitute and salt).
- Add water and egg and combine until dough forms.
- Press cake batter evenly into the buttered crock.
- In the mixing bowl, combine the dry topping ingredients (brown sugar substitute, carbquick and cinnamon).
- Work butter into the mixture using your hands or a butter cutter until the butter is fully incorporated into the mixture.
- Sprinkle the topping evenly over the cake and cook on high until the cake sets in the center. (45 mins to 3 hours). Timing will vary greatly depending on your slow cooker.
- Allow cake to cool slightly before cutting into 8 pieces.

I stumbled on to this recipe and laughed. A coffee cake in a crockpot. I tried it gave it to my non keto hubby and son ( did not tell them it was lo carb) I have crumbs left. It took longer than 45 minutes, but my crockpot is old. We ate some of the sides and let the middle ooze into the open area. About 15 minutes and it was done. And finish cooking. A great start to a chilly day on the farm. Thanks for the recipe. Look forward to reading more of your recipes!

How to make in oven I don’t have a Crock-Pot
We haven’t tried making this in the oven. You might try cooking it at 350 until the cake is set. If you give it a try, let us know how it goes!
