How to Make Low Carb Broccoli Cheese Bake in a Slow Cooker

Cris here. I am so excited to share this recipe with you! It is one of my favorite crock pot dishes I have made in a while. This Crock Pot Broccoli Cheese Bake makes for a delicious holiday side dish or special treat for family dinner. Truth be told, we have even been known to eat the leftovers for breakfast!

Low Carb Holiday Side Dishes

Readers who know we have been eating low carb for quite a while have been asking me to share some of our favorite low carb holiday recipes. THIS recipe is definitely going to be on my low carb holiday menu right along side our Low Carb Holiday Ham both for Thanksgiving and Christmas!

Crock Pot Broccoli Cheese Bake Notes

  • We adapted this oven recipe to make it a low carb crock pot recipe. We use Carbquick instead of the Jiffy Corn Bread Mix to make the dish low carb. You can use whichever you prefer.
  • If you are looking for more low carb recipes, you can find them here.
  • We have made this recipe in a traditional 6 quart slow cooker and our Ninja Multicooker. We have not tested it in the casserole crock, but since this casserole does NOT have to rise a lot in the middle, my guess is it should cook up okay. You may have to double this recipe for the casserole crock. Once I am able to test it in my casserole crock, I will update this post.

  • As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • Cooking time could vary GREATLY with this recipe. It is not a fix it and forget it recipe. You will need to watch it the first time you make it. But it will be worth it– promise! All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

Ingredients

  • 1 cup Carbquick or 1 box Jiffy Corn Mix if not low carb
  • 12 oz Frozen Broccoli Florets thawed
  • 1 stick Butter divided and melted
  • 1 cup Shredded Cheddar Cheese
  • 4 eggs beaten
  • salt and pepper to taste
  • 1/2 cup Onion chopped

Instructions

  • Pour half of the butter into the bottom of a 6 quart slow cooker and spread evenly.
  • Combine remaining ingredients in a mix bowl and mix well.
  • Pour into slow cooker and cook on high until the center sets. Cooking time will vary from slow cooker to slow cooker 45 minutes to 3 hrs, depending on how hot your slow cooker cooks.

    So I made a booboo making this but it still turned out pretty tasty. I thought I had a bag of frozen broccoli. Turns out it was frozen diced bell peppers. I didn’t figure it out until I had dumped it in the bowl. I popped all the peppers that hadn’t touched any other ingredients back in the bag. I went back to the freezer and not one bag of broccoli. To save it, I added a drained can of whole kernel corn and called it a cornbread casserole. Still tasted good
