How to Make Low Carb Fried Chicken in an Air Fryer

We love fried chicken and so when we went low carb in my house (and camper kitchen), I was constantly trying all kinds of breading substitutes and failing miserably. I recall one VERY bad incident with some Parmesan cheese that made a huge — not to mention expensive– mess of things!
Then I found CarbQuick and that is when I began working on my dream low carb alternative to traditionally flour dredged fried chicken. (Note: They are not a sponsor, nor do they know me from Adam.)
Now, I know that not all low carb diets are created equal and not all allow ingredients like CarbQuick, however, in this house, it is used as a low carb treat to eat some of our favorite foods, including this amazing Low Carb Fried Chicken Breading Recipe. We have used it to fry chicken on the stove and in the air fryer multiple times and it always produces a wonderful crispy coating that my carb loving family RAVES about with a fraction of the carbs as traditional fried chicken.

How to Make a Low Carb Alternative Breading for Fried Chicken
You simply mix together all of the dry ingredients and keep them in a sealed storage bag or container.
Low Carb Fried Chicken Breading Recipe Notes
- To make this low-carb, we used CarbQuick. If you don’t eat low carb you can use flour, if you prefer.
- I like to split my breading into two gallon-sized baggies so that when I am ready, I can just take my chicken, roll it in some beaten eggs and toss in the bag to coat. After coating, I can just throw the bag away for easy clean up. By splitting the batches into two bags, I know I can do two different batches of fried chicken. I usually cook up around 12 legs at a time. If you like to cook less, just split into more than two bags.

Low Carb Fried Chicken Breading Mix
Ingredients
- 2 cups CarbQuick
- 1 tablespoon dill
- 1 tablespoon cumin
- 2 teaspoons paprika
- 1 teaspoon garlic
- 1 teaspoon onion
- 1 tablespoon parsley
- 1 tablespoon salt
- 1 tablespoon Lawry's Seasoned Salt
- 1 teaspoon pepper
- 1 tablespoon mustard powder
Instructions
- Mix your dry ingredients.
- Store ingredients in sealed bags or a sealed storage container until ready for use. Recipe will make multiple batches.
