I have always loved strawberry shortcake. It is one of my favorite desserts. I have been known to make it for about any special occasion or no occasion at all. So, after going low carb I was set on figuring out a way to still enjoy one of my favorite desserts. CarbQuick to the rescue. I adore this recipe and it is the low carb dessert I make the most for my family and friends.

Instructions

  • In a large bowl, combine the strawberries with 1/2 cup of the sugar substitute.
  • Smash several strawberries against the bowl to aid the strawberries in beginning to produce their juices.
  • Set aside and stir occasionally to keep strawberries reducing juices.
  • In another bowl, combine the Carbquick with the butter, fully working the mix into the butter. (I often use my hands to work it together.)
  • Mix in the sugar substitute and salt.
  • Add water to form a dough.
  • Form dough into 6 equal sized biscuits.
  • Place biscuits into air fryer basket and air fry (or air crisp) at 400 for 8 to 9 minutes or until biscuits are no longer doughy.
  • We like to let the the biscuits rest for 3 minutes before removing from the air fryer.
  • Serve shortcakes upside down with strawberries spooned over the top and garnish with sugar free whipped cream, if desired.
