I have always loved strawberry shortcake. It is one of my favorite desserts. I have been known to make it for about any special occasion or no occasion at all. So, after going low carb I was set on figuring out a way to still enjoy one of my favorite desserts. CarbQuick to the rescue. I adore this recipe and it is the low carb dessert I make the most for my family and friends.

- Confectioner’s Sugar Substitute is a key ingredient in this dish to help add sweetness without adding a gritty texture.
- If you are not interested in low carb, you can use Bisquick’s shortcake recipe and make it into air fryer shortcake biscuits instead.

Air Fryer Strawberry Shortcake (Low Carb) Recipe
Air Fryer Strawberry Shortcake (Low Carb)
Ingredients
Strawberry Topping
- 1 pint strawberries sliced
- 1/2 cup confectioner's sugar substitute
Shortcake
- 2 cups CarbQuick
- 1/4 cup butter cold, cubed
- 1/2 cup confectioner's sugar substitute
- pinch salt
- 2/3 cup water
- garnish: sugar free whipped cream
Instructions
- In a large bowl, combine the strawberries with 1/2 cup of the sugar substitute.
- Smash several strawberries against the bowl to aid the strawberries in beginning to produce their juices.
- Set aside and stir occasionally to keep strawberries reducing juices.
- In another bowl, combine the Carbquick with the butter, fully working the mix into the butter. (I often use my hands to work it together.)
- Mix in the sugar substitute and salt.
- Add water to form a dough.
- Form dough into 6 equal sized biscuits.
- Place biscuits into air fryer basket and air fry (or air crisp) at 400 for 8 to 9 minutes or until biscuits are no longer doughy.
- We like to let the the biscuits rest for 3 minutes before removing from the air fryer.
- Serve shortcakes upside down with strawberries spooned over the top and garnish with sugar free whipped cream, if desired.
