How to Make Coconut Cream Bars in a Slow Cooker

Coconut Cream Pie is one of my all time favorite pies. That is why I was thrilled to find an incredible Coconut Custard Pie in one of our favorite low carb cookbooks, Easy Keto Desserts. I make it a lot. So it got me thinking of how on earth am I going to make it when we go back on the road in the RV… because going without is NOT an option- ha!
After several tests, I eventually figured out how to make a coconut cream bar version in my slow cooker that I absolutely love.
You can make these bars low carb with sugar substitutes or if you are not eating low carb, just use regular powdered sugar and serve with a side of pie crust cookies. Pie crust cookies you ask? Simply refrigerator pie dough into strips and bake until golden. You’ll never go back to regular pie again.
Making Crock Pot Coconut Cream Bars Low Carb
We use a powdered sugar substitute to make these Coconut Cream Bars low carb, our two favorite brands both make a powdered confectioner’s sugar version. We recommend Sukrin or Swerve

- This recipe was inspired by the Coconut Custard Pie in one of our favorite low carb cookbooks, Easy Keto Desserts. If you have a sweet tooth but are eating low carb or need to watch your sugar intake, I highly recommend this cookbook. I haven’t tried a recipe in it that I did not love.
- We use a powdered sugar substitute to make these Coconut Cream Bars low carb, our two favorite brands both make a powdered confectioner’s sugar version. We recommend Sukrin or Swerve.
- The auto calculation in this recipe includes sugar alcohols in the carb count. As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly. - Our 6 Quart Ninja cooks this up fantastic every time in about an hour. You should be able to use any 6 quart slow cooker, however cooking times will depend on your slow cooker. We have not tested it in our casserole crock, but will update once we do.

Crock Pot Coconut Cream Bars (Low Carb Option) Recipe
Crock Pot Coconut Cream Bars (with Low Carb Option)
Ingredients
- lard or butter to grease crock insert
- 1 cup heavy whipping cream
- 3/4 cup powdered sugar or powdered sugar substitute
- 4 eggs
- 1/2 cup full fat coconut milk
- 1/4 cup butter melted and cooled slightly
- 1 cup unsweetened shredded coconut
- 3 tablespoon coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- garnish: whipped cream or sugar free whipped cream
Instructions
- Grease a 6 quart slow cooker with lard or butter.
- In a blender or food processor blend together cream, sugar/sugar substitute and coconut milk.
- Add remaining ingredients and blend again.
- Pour into the slow cooker and place a paper towel or tea towel underneath the lid to catch moisture.
- Cook on high for 1-3 hours checking regularly for the edges and center to set.
- Once set, remove crock insert immediately from the slow cooker. Carefully remove lid so that any liquid does not get on bars. And, cool crock insert on a cooling rack for 30 minutes.
- Refrigerate uncovered for at least an hour or until bars cool completely.
- Cut into 8-10 squares and serve topped with whipped cream.
- Store remaining bars in the fridge.
