Ever since we shared our Low Carb Air Fryer Biscuits and Gravy, readers have been asking me to convert it into an oven recipe. So, today we are sharing how we make Biscuits and Gravy low carb style in the oven!
Notes on Oven Low Carb Biscuits and Gravy Casserole

- CarbQuick is the mix we use to make the biscuit topping low carb.
- If you are not eating low carb, you can use your own prepared biscuit mix or dough. Just make sure to crumble it on top and not in full biscuit form.
- We use Xanthan Gum to thicken sauces and gravies in low carb cooking. You can leave it out in many cases, but the gravy may be thin.

Low Carb Biscuits and Gravy Casserole (Oven) Recipe
Oven Biscuits and Gravy Casserole (Low Carb)
Ingredients
Gravy Ingredients
- 1 lb ground breakfast sausage browned & drained
- 4 oz cream cheese melted (30 seconds in microwave)
- 1/2 cup water
- 1/2 cup heavy whipping cream
- 1/2 teaspoon garlic powder
- 1 teaspoon xanthan gum
- salt and pepper to taste
Biscuit Topping Ingredients
- 2 cups Carb Quick
- 1/4 cup butter cubed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 cup heavy whipping cream
- 1/4 cup water
Instructions
- Preheat oven to 400 degrees.
- Mix gravy ingredients together in a bowl and transfer to an oven safe skillet or casserole dish. We use a 9x9 dish or a 10 inch skillet.
- Prepare biscuit topping by first working butter into CarbQuick until crumbly.
- Add remaining ingredients and mix well until a dough forms.
- If dough is too crumbly, add a little more water, a tablespoon at a time, until dough holds together
- Break dough into small pieces and cover gravy mixture completely with biscuit pieces, layering on top of other pieces until all dough is used.
- Bake for 20-25 minutes until biscuit topping is golden and baked through.

42 carbs per serving? That’s a LOOOONG way from being “low carb.”
Hi Steven- If you are counting carbs and not net carbs, this is probably not the recipe for you. However if you are counting net carbs, it is around 7 net carbs per serving.
Biscuits and gravy…GOODe stuff!! Could you use a little flour or cornstarch to thicken the gravy?

I haven’t tried either because we typically avoid both in our daily diet. However, if your diet allows for it, you could definitely try. If you don’t want to use xanthan gum, I would probably try it without first and not add anything else or even try using a bit of the carb quick instead and see what happens. But I haven’t tried using carb quick as a thickener, so that is just speculation. I have tried the recipe without the xanthan gum as is and it just has a thinner gravy but still tastes wonderful. Enjoy!
