How to Make Chicken Rice Harvest Soup in a Crock Pot
Aunt Lou here.
Years ago, Mikey made this soup on the stove. (You can find the stove top version of the recipe here.) It is so yummy that I wanted to make it in my crock pot. This Crock Pot Chicken Rice Harvest Soup is incredibly easy to throw together. There are quite a few ingredients, but your crock pot does all the hard work for you. 😉
I did make a couple adjustments from Mikey’s original masterpiece recipe. I used cream of mushroom soup instead of cream of chicken and mushroom soup because I can’t get cream of chicken and mushroom soup in my small rural town’s grocery store. If you can get it in your local grocery store, go for it! I also shredded the chicken instead of cutting it into cubes since I find it easier to shred it. Other than that, this recipe is straight from the mind of Mikey.
I used basmati rice in my soup because it is my favorite kind of rice. Seriously, I buy it in bulk because I love it so much. However, you can use your favorite long cooking rice. When you look at the package, if it has a cooking time of 20 minutes on the stove top, it should work in this recipe.
