How to Make Chicken Rice Harvest Soup in a Crock Pot

Years ago, Mikey made this soup on the stove. (You can find the stove top version of the recipe here.) It is so yummy that I wanted to make it in my crock pot. This Crock Pot Chicken Rice Harvest Soup is incredibly easy to throw together. There are quite a few ingredients, but your crock pot does all the hard work for you. ๐
I did make a couple adjustments from Mikey’s original masterpiece recipe. I used cream of mushroom soup instead of cream of chicken and mushroom soup because I can’t get cream of chicken and mushroom soup in my small rural town’s grocery store. If you can get it in your local grocery store, go for it! I also shredded the chicken instead of cutting it into cubes since I find it easier to shred it. Other than that, this recipe is straight from the mind of Mikey.
I used basmati rice in my soup because it is my favorite kind of rice. Seriously, I buy it in bulk because I love it so much. However, you can use your favorite long cooking rice. When you look at the package, if it has a cooking time of 20 minutes on the stove top, it should work in this recipe.
What You Will Need for Crock Pot Chicken Rice Harvest Soup
Ingredients Needed
- 32 oz chicken broth
- 10.5 oz can cream of mushroom soup
- 4 cups water
- 1.5 lbs boneless, skinless chicken thighs
- 4 ribs of celery, sliced
- 3 green onions, chopped
- 1 1/2 cups sliced baby carrots
- 8 oz sliced mushrooms
- 1 teaspoon dried garlic
- 1 cup long grain, long cooking rice (I used Basmati rice.)
- Salt and pepper to taste
Time Needed
- Can opener
- Measuring cups
- Sharp knife
- Cutting board
- Measuring spoon
- Wooden spoon
- Two forks
- Medium size mixing bowl (optional)
- 6 quart crock pot
Time Needed
- Prep Time: 20 minutes
- Cooking Time: 5 to 6 hours on low or 2.5 to 3 hours on high
- Additional Cooking Time: 20 minutes on high

Crock Pot Chicken Rice Harvest Soup
Ingredients
- 32 oz chicken broth
- 10.5 oz Can Cream of Mushroom Soup
- 4 cups water
- 1.5 lb boneless skinless chicken thighs
- 4 ribs celery sliced
- 3 green onions chopped
- 1.5 cups sliced baby carrots
- 8 oz package sliced mushrooms
- 1 teaspoon dried garlic
- 1 cup long grain long cooking rice (I used basmati rice.)
- Salt and Pepper to taste
Instructions
- Put all of your ingredients, except your rice, in a 6 quart crock pot and stir.
- Cover and cook on low for 5-6 hours or high for 2.5-3 hours.
- Take two forks and shred your chicken. (You can put the chicken thighs in a bowl to shred if that is easier for you and return the chicken to your crock pot.)
- Add your rice to your crock pot, stir and turn on high (if it isn't already on high). Cover and cook for 20 minutes. It is done when your rice has reached desired tenderness.
