How to Make Easy Blueberry Lemon Bars in Oven

Cris and I were talking about recipe ideas one day, and she brought up how I could make these delicious Easy Blueberry Lemon Bars. They are a great treat to have around the house or to take to a potluck. The blueberry and lemon flavors just compliment each other perfectly.

This recipe uses a lemon bar box mix. My store had two different brand options available, so I looked at the instructions to see the similarities and differences. They were very similar, and I have wrote the recipe to account for the slight variations. Both mixes said to prepare these in a 8×8 baking dish. However, with the added moisture from the blueberry pie filling, this recipe needs to be prepared in a 9×13 baking dish. I tried it both ways, and the center set up much better in the larger baking dish.

Here’s a bonus tip: Use a plastic knife to cut your lemon bars instead of a metal knife. The cut will be much smoother.

What You Will Need for Easy Blueberry Lemon Bars

Ingredients Needed

  • 16.5 oz lemon bars mix, plus whatever is needed to prepare the crust and filling
  • 1 cup blueberry pie filling
  • Optional: powdered sugar to spring on the top

Equipment Needed

Time Needed

  • Prep Time: 10 minutes (plus however long it takes to preheat your oven to 350 degrees Fahrenheit), part of this time will be after you have baked your crust on its own
  • Cooking Time: 35 to 40 minutes at 350 degrees Fahrenheit, turning your insert halfway through the cooking time after you have added your lemon and blueberry fillings if your oven does not cook evenly
  • Cooling Time: 45 minutes to 1 hour to cool completely (this makes it easier to cut the bars)

Ingredients

  • 1 box lemon bar mix prepared
  • 1 cup blueberry pie filling
  • powdered sugar optional to sprinkle on top

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Prepare your filling per the instructions on the box and set aside.
  • Prepare the crust per the instructions on the box and press into the bottom of a 9×13 baking dish and bake per instructions on the box.
  • Once the crust baking time is done, stir the filling you set aside and pour onto your crust.
  • Take a small spoon and plop small spoonfuls of blueberry pie filling all around your lemon filling (the blueberry filling will sink into the lemon filling).
  • Cover with aluminum foil and bake for 15 minutes.
  • Uncover, rotate your baking dish if your oven does not cook evenly and cook for an additional 10-15 minutes. It is done when the center is set and the edges are golden.
  • Once your blueberry lemon bars are done, set them on a cooling rack to cool for 30-60 minutes (the more your lemon bars have cooled, the easier they will be to cut).
  • If desired, sprinkle with powdered sugar before serving.
