How to Make Lemon Poke Cake in an Oven

The first poke cake I can remember having as a child was a Big Red Poke Cake. A family friend, Bear (His real name is Greg, but I didn’t know that until I was in my mid 20s!), brought one to a get together my family attended. I remember thinking it was the most amazing cake ever.
As an adult, I have grown to really love lemon desserts and made a crock pot version of this amazing cake. I know our readers love having multiple ways to create our recipes. So when Cris suggested I do the oven version of this Lemon Poke Cake, I was all for it! It is so yummy!
This is a perfect treat for your family at home or to take to a get together to share with friends or family. My 6 and 8 year old love it just as much as I do!
What You Will Need
Ingredients Needed
- 1 white cake mix, prepared
- 12 oz can lemon-lime soda
- small package lemon jello
- 1 tub frozen whipped topping, thawed
- 1 small box instant lemon pudding
Equipment Needed
- Large Mixing bowl and hand mixer or stand mixer
- Small mixing bowl
- Medium mixing bowl
- Stirring spatulas
- 9 x 13 baking dish
Time Needed
- Cake Prep Time: 5 minutes
- Baking Time: Varies. Bake your cake mix according to the instructions on the cake mix box.
- Cake Cooling Time: 30 minutes
- Optional Chilling Time: 20 minutes or until time to serve

Lemon Poke Cake Oven Recipe
Ingredients
- 1 white cake mix , prepared
- 12 oz can lemon-lime soda
- small package lemon jello
- 1 tub frozen whipped topping , thawed
- 1 small box instant lemon pudding
Instructions
- Preheat your oven per the instructions on the back of your cake mix box
- Pour your prepared cake batter in a lightly greased 9×13 baking dish
- Bake your cake according to the instructions on your cake mix box
- Once your cake passes "the toothpick test", let it cool
- When your cake is cooled, poke holes in your cake with a toothpick
- Mix together your lemon-lime soda with your jello
- Evenly pour your jello mixture over your cake
- In a different bowl, mix together your whipped topping and pudding mix
- Gently spread your topping evenly over the cake
- If desired, chill before serving
