How to Make Creamy Chicken Casserole in a Crock Pot

When Cris sent this recipe to me and asked if I could make it into a crock pot recipe, she heard an enthusiastic yes from me! I made a few changes, and now you have this delicious Creamy Crock Pot Chicken Casserole!
Now this is not a dump and go recipe. There are multiple steps in the prep. I know I used to be afraid of recipes that had very many steps. However, do not let this scare you away. The steps in this recipe are simple. Even if you are just starting out in your cooking adventure, you can do this. This recipe is a great confidence booster for a novice!
Everything goes into the crock pot cooked, so the cRockin’ time is short. It would be similar to if you put something in your oven for a half hour or so. This is perfect for when you don’t want to use your oven, your oven is not working or when you are traveling and have a stove top available, but not an oven. Whatever your circumstances, I am positive you will love this recipe!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cubed and cooked
- 2 cups bow tie pasta, cooked al dente
- 3 tablespoons butter, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons flour
- 1/2 cup sour cream
- 1 cup milk (I used 1%.)
- 2 cups shredded colby jack cheese
- 1 cup mozzarella cheese
- salt and pepper to taste
Equipment Needed
- Pot and strainer (for cooking your chicken)
- Pot and strainer (for cooking your pasta)
- Butter knife
- Sharp knife
- Cutting board
- Garlic press
- Measuring spoons
- Measuring cups
- Large skillet
- Wooden spoons
- Large bowl
- Stirring spatula
- 6 quart slow cooker or casserole crock pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 1 hour on high or 1.5 to 2 hours on low

Creamy Crock Pot Chicken Casserole
Ingredients
- 2 lbs boneless skinless chicken cubed and cooked
- 2 cups dry bowtie pasta cooked al dente
- 3 tablespoons butter sliced
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons flour
- 1/2 cup sour cream
- 1 cup milk
- 2 cups shredded Colby Jack cheese
- 1 cup Shredded Mozzarella Cheese
- Salt and Pepper to taste
Instructions
- Melt your sliced butter in a large skillet over medium high heat
- Sauté your onions and garlic until translucent (just a few minutes)
- Reduce heat to medium and stir in flour for approximately 1 minute
- Add in your sour cream and milk, whisking continually until your sauce starts to thicken, about 5 minutes
- Stir in your colby jack cheese and continue stirring until it is all well blended together
- Put your prepared chicken and pasta in a large bowl and top with the sauce from the skillet and gently toss with two wooden spoons until all the chicken and pasta are well coated
- Spread this mixture in a lightly greased casserole crock pot or 6 quart crock pot
- Sprinkle mozzarella cheese on top
- Cover and cook on low for 1.5-2 hours or high for 1 hour
