How to Make Chicken Spaghetti Casserole in a Crock Pot

Ya’ll, we absolutely loved the Crock Pot Spaghetti Casserole I made recently. So, when there was chicken on sale at my local grocery store, it got me thinking….what if I tweaked this recipe a little bit and also made it with chicken instead of beef? The results? Absolutely delicious! You and your loved ones are going to fall in love with this Crock Pot Chicken Spaghetti Casserole! Seriously, the flavor is wonderful!
I love taking our favorite recipes and switching them up. It gives my family and your family options for when you want to make a recipe with ingredients you have in your house. We generally get questions from our readers asking if they can try a recipe with a different meat, and since we loved this recipe so much with the meatballs, my family was not upset one bit to have it again, but with chicken, so soon.
This recipe is very filling, so if you have a large family or need to feed a crowd, this recipe is perfect! Or, if you have a smaller family, but don’t like to cook every night and like leftovers (by the way, these leftovers are delicious!), this recipe is perfect! Either way, I hope you enjoy this recipe as much as we do!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cut into bite size pieces
- Extra virgin olive oil (enough to put a thin layer across the bottom of your skillet)
- 24 oz jar spaghetti sauce
- 1 onion, chopped
- 16 oz box thin spaghetti, cooked al dente (do not cook to desired texture, it will continue to cook in the crock pot)
- 1 cup sour cream
- 8 oz cream cheese, softened
- 2 teaspoon garlic powder, divided
- 2 teaspoon Italian seasoning, divided
- 1.5 cups shredded Mozzarella cheese
- Optional: shredded parmesan cheese as garnish
Equipment Needed
- Large pot
- Strainer (I love my on-pot strainer)
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoon
- Medium bowl
- Stirring spatula
- Casserole Crock Pot or 6 quart slow cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2-3 hours on low or 1-1.5 hours on high (turning your insert halfway through if your slow cooker does not cook evenly)

Crock Pot Chicken Spaghetti Casserole
Ingredients
- 2 lbs boneless skinless chicken cut into bite size pieces
- extra virgin olive oil enough to cover the bottom of your skillet
- 24 oz jar spaghetti sauce
- 1 small onion diced
- 16 oz thin spaghetti cooked al dente (NOT to the texture you desire)
- 1 cup sour cream
- 8 oz cream cheese softened
- 2 teaspoon garlic powder divided
- 2 teaspoon Italian Seasoning divided
- 1.5 cups Shredded Mozzarella Cheese
- shredded parmesan optional garnish
Instructions
- Heat your oil in your skillet over medium high heat
- Carefully place your chicken and onion in your heated oil and sprinkle with 1 teaspoon garlic powder and 1 teaspoon Italian seasoning, cover and reduce heat to simmer for 5-10 minutes (depending on how big or small your chicken pieces are cut) and drain once chicken is cooked through
- In a bowl, mix together your sour cream, cream cheese, 1 teaspoon garlic powder and 1 teaspoon Italian seasoning
- Mix together your al dente noodles, chicken and onion mixture and cream cheese mixture in the pot you cooked your noodles in and spread in the bottom of your lightly greased casserole crock pot or 6 quart crock pot
- Spread your spaghetti sauce evenly across your spaghetti mixture
- Top with your shredded mozzarella cheese
- Cover and cook on low for 2-3 hours or high for 1-1.5 hours, turning your insert halfway through if your crock pot does not cook evenly

I assume you are using 2 boneless, skinless chicken BREAST. The recipe does not specify or I have overlooked in your narrative. Or possibly breast or thighs could be used, or a mixture? Could a rotisserie chicken be used and skip the browning? I look forward to receiving your emails! You have so many good, easy, quick meals. Thank you for all you do! It helps to make my dinner time much more pleasant.

You can use breasts or thighs or a mixture, as long as it is 2 lbs of boneless, skinless chicken. We usually prefer dark meat, but use white meat when it is on sale. I’m all for saving time! I have not tried this with rotisserie chicken, but think it should work fine for a time saver. If you give it a try, let me know how it turns out!
