How to Make Homemade Blueberry Muffins in a Ninja Foodi (or Air Fryer)

These Homemade Ninja Foodi Blueberry Muffins are so good that my son, who usually refuses to eat anything with blueberries in it, had not one but two of these! We have had them for breakfast and dessert. They are that good. Even better, they are simple to make.

I bought some reusable silicone baking cups for this recipe since my muffin tin would not fit in my Ninja Foodi. They are wonderful! Not only did they hold their shape without a muffin tin, the muffins easily came out and in one piece. As an added bonus, they are super easy to clean too!

You may be wondering why I used a reusable silicone liner when the muffins were already in silicone baking cups. I did this because the liner gave the baking cups a flat surface to sit on. The Air Crisp plate has ridges on it and a handle in the middle. So, when I tried to put the muffins in without the liner, they weren’t sitting flat. The liner was an easy fit for that!

What You Will Need for Homemade Ninja Foodi Blueberry Muffins

Ingredients Needed

  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup blueberries, rinsed
  • 3 tablespoons butter, melted
  • 2 tablespoon plain Greek yogurt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/3 cup milk
  • Optional: additional sugar to sprinkle on top of muffins

Equipment Needed

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 6 minutes at 325 degrees Fahrenheit, turn your insert and use tongs to swap the middle muffin with the most done muffin on the outer circle of muffins, then 4 minutes at 325 degrees (You will do this twice with 6 muffins in each batch.)

  • In a large mixing bowl, mix together 1 cup all purpose flour, 3 tablespoons sugar, 1/4 teaspoon salt and 2 teaspoons Baking Powder with a whisk until well combined .
  • Place your rinsed 1 cup Fresh Blueberries in a small mixing bowl, sprinkle with 1 tablespoon of your dry ingredients mixture and gently toss until all the blueberries are coated, set aside.
  • Add 3 tablespoons butter (melted), 2 tablespoons plain Greek yogurt, 1 large egg, 2 teaspoons vanilla extract and 1/3 cup milk to your dry ingredient mixture and stir with a stirring spatula until well combined.
  • Place a reusable silicone liner in the insert of your 6.5 Quart Ninja Foodi with the air crisp plate or 7 Quart Air Fryer and preheat to 325 degrees Fahrenheit for 3 minutes.
  • Fold your coated blueberries into the batter.
  • Spoon your blueberry muffin batter into reusable silicone muffin/baking cups. You will want the cups to be half full.
  • If desired, sprinkle a little bit of Sugar on top of each muffin.
  • Place 6 muffin cups in your Ninja Foodi or air fryer. (I had 5 in a circle with one in the middle.)
  • Close the Ninja Foodi or air fryer and air fry for 6 minutes at 325.
  • Turn your insert 180 degrees and use tongs to swap the middle muffin with the most done muffin on the outer circle of muffins.
  • Close the Ninja Foodi or air fryer and air fry for an additional 4 minutes at 325. (They are done when the muffins pass the toothpick test.)
