SugarOptional for sprinkling on top of the muffins
Instructions
In a large mixing bowl, mix together 1 cup all purpose flour, 3 tablespoons sugar, 1/4 teaspoon salt and 2 teaspoons Baking Powder with a whisk until well combined .
Place your rinsed 1 cup Fresh Blueberries in a small mixing bowl, sprinkle with 1 tablespoon of your dry ingredients mixture and gently toss until all the blueberries are coated, set aside.
Add 3 tablespoons butter (melted), 2 tablespoons plain Greek yogurt, 1 large egg, 2 teaspoons vanilla extract and 1/3 cup milk to your dry ingredient mixture and stir with a stirring spatula until well combined.
Place a reusable silicone liner in the insert of your 6.5 Quart Ninja Foodi with the air crisp plate or 7 Quart Air Fryer and preheat to 325 degrees Fahrenheit for 3 minutes.
Fold your coated blueberries into the batter.
Spoon your blueberry muffin batter into reusable silicone muffin/baking cups. You will want the cups to be half full.
If desired, sprinkle a little bit of Sugar on top of each muffin.
Place 6 muffin cups in your Ninja Foodi or air fryer. (I had 5 in a circle with one in the middle.)
Close the Ninja Foodi or air fryer and air fry for 6 minutes at 325.
Turn your insert 180 degrees and use tongs to swap the middle muffin with the most done muffin on the outer circle of muffins.
Close the Ninja Foodi or air fryer and air fry for an additional 4 minutes at 325. (They are done when the muffins pass the toothpick test.)
