Place a large skillet on the stove and preheat over medium heat, or preheat a griddle to 300 degrees Fahrenheit.
In a small mixing bowl, combined very softened 1/2 cup unsalted butter, 1 tablespoon grated parmesan cheese, 1 teaspoon garlic powder and 1/2 teaspoon Italian Seasoning until smooth.
Spread the butter mixture over one side of each of the 8 slices bread and lay them out on a large baking sheet or a piece of aluminum foil.
Divide the 8 slices of buttered bread, 8 slices mozzarella cheese and 24 slices pepperoni into four sandwiches. (Each sandwich is assembled as follows: a slice of bread butter side down, a slice of mozzarella, 6 slices of pepperoni, a slice of mozzarella and 6 slices of pepperoni topped with a slice of bread butter side up.)
Place the sandwiches on the preheated skillet or griddle and grill for 2-3 minutes on the first side, until it reaches the desired golden color.
Flip the sandwiches and grill for an additional 2-3 minutes, until the second side reaches desired golden color.
Serve while warm with pizza sauce for dipping, if desired.
