I have taken one of our favorite crock pot soup recipes and adapted it to a stove top recipe. You are going to love this flavorful Easy White Lasagna Soup.
Brown and drain 1 lb ground Italian sausage and 1/4 cup onion together.
In a large pot, combine the sausage mixture, 3 cloves minced garlic, 2 cups baby spinach, 15.5 oz can cannellini beans (undrained), 14.5 oz Can Diced Tomatoes with Basil, Oregano and Garlic (undrained), 1 cup heavy cream, 1 1/2 cups ricotta cheese, 3/4 cup Shredded Mozzarella Cheese, 3/4 cup Shredded Parmesan Cheese, 8 Traditional Lasagna Noodles (broke into pieces), 4 cups chicken broth and Salt and Pepper to taste and stir until well combined.
Cover and bring to a boil over medium high heat, reduce heat to medium and cook for an additional 12-15 minutes, stirring frequently. It is done when the pasta reaches desired tenderness.
If desired, serve topped with additional shredded parmesan cheese.
