I have taken one of our favorite crock pot soup recipes and adapted it to a stove top recipe. You are going to love this flavorful Easy White Lasagna Soup.

This Easy White Lasagna Soup is so incredibly easy to make that it is hard to believe how flavorful and hearty it is. Between the lasagna noodles, beans and Italian sausage, this recipe is very filling. Add into that the cheeses, garlic onion and spinach, and you end up with an amazing soup that takes less than an hour to make start to finish! This is a soup that I will make again and again. It is that good!

What You Will Need for Easy White Lasagna Soup (Stove Top Recipe)
Ingredients Needed
- 1 lb ground Italian sausage, browned and drained
- 1/4 cup white onion, diced
- 3 cloves minced garlic
- 2 cups baby spinach, washed
- 15.5 oz can cannellini beans, undrained
- 14.5 oz can diced tomatoes with basil, garlic and oregano, undrained
- 1 cup heavy cream
- 1 1/2 cups ricotta cheese
- 3/4 cup shredded mozzarella cheese
- 3/4 cup fresh grated parmesan cheese, plus more for garnish
- 8 traditional lasagna noodles, broken into pieces
- 4 cups chicken broth
- Salt and pepper to taste
Equipment Needed
- Skillet and strainer orย micro cooker
- Meat chopper
- Sharp knife
- Cutting board
- Garlic press
- Measuring cups
- Safety can opener
- Wooden spoonย orย stirring spatula
- Large pot with lid
Time Needed
- Prep Time: 10 minutes
- Cooking Time: approximately 15 minutes over medium high to bring everything to a boil, plus an additional 12 to 15 minutes over medium heat, stirring frequently, until the lasagna noodles reach desired tenderness

Easy White Lasagna Soup (Stove Top Recipe)
Ingredients
- 1 lb ground Italian sausage
- 1/4 cup onion diced
- 3 cloves minced garlic
- 2 cups baby spinach
- 15.5 oz can cannellini beans undrained
- 14.5 oz Can Diced Tomatoes with Basil, Oregano and Garlic undrained
- 1 cup heavy cream
- 1 1/2 cups ricotta cheese
- 3/4 cup Shredded Mozzarella Cheese
- 3/4 cup Shredded Parmesan Cheese plus more for garnish
- 8 Traditional Lasagna Noodles broke into pieces
- 4 cups chicken broth
- Salt and Pepper to taste
Instructions
- Brown and drain 1 lb ground Italian sausage and 1/4 cup onion together.
- In a large pot, combine the sausage mixture, 3 cloves minced garlic, 2 cups baby spinach, 15.5 oz can cannellini beans (undrained), 14.5 oz Can Diced Tomatoes with Basil, Oregano and Garlic (undrained), 1 cup heavy cream, 1 1/2 cups ricotta cheese, 3/4 cup Shredded Mozzarella Cheese, 3/4 cup Shredded Parmesan Cheese, 8 Traditional Lasagna Noodles (broke into pieces), 4 cups chicken broth and Salt and Pepper to taste and stir until well combined.
- Cover and bring to a boil over medium high heat, reduce heat to medium and cook for an additional 12-15 minutes, stirring frequently. It is done when the pasta reaches desired tenderness.
- If desired, serve topped with additional shredded parmesan cheese.
