How to Make White Lasagna Soup in a Crock Pot

Aunt Lou here.

So, this Crock Pot White Lasagna Soup may have a bit of a red tint to it, but I still consider it a “white” lasagna soup because of the ingredients. The reason it has a red tint to it is because I just could not bring myself to drain my tomatoes. I love the flavor the juices in a can of diced tomatoes with basil, garlic and oregano. They just take a recipe to the next level, in my humble opinion.

I have you stir this recipe a couple of times to make sure the noodles are cooking evenly. When you are checking to see if your soup is done, you will just take one of the lasagna noodle pieces and see if it has reached the desired tenderness. As soon as the noodles are done, you are ready to serve it up!

Can I substitute small navy beans for the beans in this recipe? I don’t like those bigger beans & they give me gas too. I can’t wait to make this!

I haven’t tried this recipe with navy beans, but if those are your preferred beans, then I think it is worth a shot. If you give it a try, let me know how it turns out!
