Cathy, one of our readers, asked if she could substitute tortellini or gnocchi for the potatoes in Cris’ Crock Pot Italian Meatball Soup. I told her that I had not tried that it sounded like a great idea! So, now you have this delicious Italian Meatball Crock Pot Tortellini Soup. It is so incredibly simple to make, cooks up quickly and reheats well. I highly recommend giving this a try. (Thanks for the idea, Cathy!)

I used thawed Italian style meatballs in this recipe. That way I can just throw in the frozen veggies and tortellini (still frozen) at the beginning and not worry about them getting mushy before the meatballs we ready. It also shortens the cooking time quite a bit from the recipe I was adapting.

What You Will Need for Italian Meatball Crock Pot Tortellini Soup

Ingredients Needed

  • 26 oz bag frozen Italian style meatballs, thawed
  • 12 oz bag frozen mixed vegetables, kept frozen
  • 19 oz bag frozen cheese tortellini, kept frozen
  • 29 oz can diced tomatoes with garlic, basil and oregano, undrained (2 – 14.5 oz cans)
  • 1/4 cup diced white onion
  • 3 cloves minced garlic
  • 32 oz carton beef broth

Equipment Needed

Time Needed

  • Prep Time: 7 minutes
  • Cooking Time: 4 hours on low or 2 hours on high, stirring halfway through the cooking time

Instructions

  • Put 26 oz Italian-style meatballs (thawed), 29 oz Diced Tomatoes with Basil, Oregano and Garlic (undrained), 19 oz bag frozen cheese tortellini (kept frozen), 12 oz bag frozen mixed vegetables (kept frozen), 3 cloves minced garlic, 1/4 cup diced white onion and 32 oz carton beef broth in a 6 quart slow cooker and stir until well combined.
  • Cover and cook on low for 4 hours or high for 2 hours, stirring halfway through the cooking time.
