How to Make Creamy Corn for Two in a Crock Pot
Aunt Lou here.
This Crock Pot Creamy Corn for Two recipes is adapted from one of my absolute favorites side dish recipes. This is nothing like canned cream corn. It is sweet and savory and just the perfect side for so many meals, in my humble opinion.
Many of my smaller slow cookers cook really hot. That makes cooking a dish with cream cheese in it a little tricky, as it has to be watched closely and stirred often to keep the cream cheese from burning at the edges. However, by using the double broiler method (a bowl inside the insert with water in the insert), this cooks up perfectly.
