If you are looking for a side dish that gives you not one but two vegetables all in one and has incredible flavor, this Crock Pot Tomato Basil Corn is for you. What is even better is that this wonderfully flavorful side dish is super easy to make. If you can open a bag of freezer corn, open a can of tomatoes and stir, you can make this recipe. I love when a recipe is so beginner friendly but tastes like a ton of effort was put into it!
If you have a can of diced tomatoes without the seasonings on hand and want to try to make this recipe with what you already have in your cupboard, you can easily do so. All you need to do is add in some dried basil, dried oregano and either garlic powder or minced garlic. You can add in the seasonings to taste and cook just like the original recipe. Either way you make it, with the seasonings already added or by adding your own, I hope you and whoever you serve this to enjoy it as much as we do!
What You Will Need for Crock Pot Tomato Basil Corn
Ingredients Needed
- 12 oz bag of frozen corn, kept frozen
- 14.5 oz can diced tomatoes with basil, garlic and oregano, undrained
Equipment Needed
- Scissors
- Can opener
- Stirring spatula
- 2.5 Quart Slow Cooker
Time Needed
- Prep Time: Less than 5 minutes
- Cooking Time: 2 hours on low or 1 to 1.5 hours on high, stirring halfway through the cooking time

Instructions
- Put all your ingredients in a 2.5 quart slow cooker and stir.
- Cover and cook for approximately 2 hours on low or 1-1.5 hours on high, stirring halfway through cooking.
