Has this scenario ever happened to you…you’ve been running around like crazy all day, you look at the clock and dinner needs to be on the table in an hour, but you don’t know what you are going to serve with the main dish. Ingredients for Crock Pot Cheesy Fiesta Corn

  • 12 oz frozen corn
  • 1 cup velveeta, cubed
  • 1 clove garlic, minced
  • 10 oz diced tomatoes with green chiles
  • 1/8 teaspoon ground red pepper, optional

How to Make Cheesy Fiesta Corn in a Crock Pot

  1. Dump all of your ingredients in your 2.5 quart crock pot (I used Dotty, my 2.5-quart polka dot crock pot) and stir until well combined
  2. Cover and cook on high for 1 hour
  3. Stir and serve

Crock Pot Cheesy Fiesta Corn Notes

  • When you stir everything together, make sure your cheese cubes aren’t touching the sides of your crock pot unless you plan on giving it a good stir. Cheese is great in a crock pot, but if it is left touching the side (especially at the top or where your crock has a hot spot), it tends to turn brown or burn.
  • The ground red pepper gives it a nice added flavor without a ton of heat. However, if you like spicy foods, you could bump up the ground red pepper. Or if you are super sensitive to heat, then you can leave it out. Whatever works for you!
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

    I am not allowed anything very spicy (restricted diet). How do you think this would work without the chiles or red pepper. Any suggestions? I want to make a corn side dish in the crockpot.

    This is a good idea for a side dish, I think you could make it the main dish by putting in some browned hamburger and onions to it. I usually have the hamburger and onions browned and in the freezer that would help a lot to get this done in an hour.

      You read my mind! When Michael and I tried this, we both thought it had such a great flavor that it would be good with some kind of meat.     We have a family recipe much like this one. We like very spicy foods but since the canned tomatoes with green chiles come in several different degrees of “heat”, this recipe should be adaptable for most everyone. I occasionally add a 3-oz. package of cream cheese to my batch, and sometimes some smoked green chiles. The smoky flavor is really good with the corn. I find the smoked green chiles in the frozen food section with the Mexican foods.
