How to Make Cheesy Rotini in a Crock Pot

This Cheesy Crock Pot Rotini is actually a recipe I have made before. However, when I made it before, I used a 4 Quart Slow Cooker. I know many people just have a 6 Quart Slow Cooker, so I wanted to give this recipe a try using a 6 Quart Slow Cooker and the double broiler method. It worked beautifully!

One thing that is really important when you are using the double broiler method is to make sure that the water in your insert does not come up over halfway up the side of the bowl. If there is too much water, it could accidentally end up getting in the bowl with your recipe, and no one wants that! So, just always check to make sure that the water is just below halfway up the side of the bowl. Easy, peasy!

What You Will Need for Cheesy Crock Pot Rotini

Ingredients Needed

  • 16 oz box rotini, cooked al dente and drained
  • 10.5 oz can cheddar cheese soup
  • 16 oz pkg Velveeta, cut into cubes (or you can use half of a 32 oz package)
  • 1/2 cup melted butter
  • 2 cups half and half
  • Italian breadcrumbs, optional garnish

Equipment Needed

  • Large pot
  • Collander
  • Can opener
  • Spoon
  • Knife
  • Cutting board
  • Heat safe bowl, mug or measuring cup
  • Measuring cup
  • Heat safe mixing bowl that will fit in the insert of your 6 Quart Slow Cooker
  • Stirring spatula
  • Water
  • 6 Quart Slow Cooker
  • Oven mitt (This is used to hold the bowl when you are stirring halfway through the cooking time and at the end.)

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 1 hour and 30 minutes on low, stirring at the 45 minutes mark

Ingredients

  • 2 cups half-and-half
  • 10.75 oz can Cheddar cheese soup
  • 1/2 cup butter melted
  • 16 oz pkg Velveeta or half of a 32 oz pkg, cubed
  • 16 oz box rotini pasta cooked al dente and drained
  • Italian bread crumbs garnish

Instructions

  • Put 2 cups half-and-half, 10.75 oz can Cheddar cheese soup and 1/2 cup butter (melted) in a large heat safe mixing bowl that will fit in the insert of a 6 Quart Slow Cooker and stir until well combined.
  • Add 16 oz pkg Velveeta (cubed) and 16 oz box rotini pasta (cooked al dente and drained) and stir until well combined.
  • Put about 2 inches of water in you 6 Quart Slow Cooker's insert and place the bowl in the water. (If the water comes up past halfway up the side of the bowl, remove some of the water.)
  • Cover and cook on low for 1.5, stirring after 45 minutes. Stir again at the end of the cooking time.
  • If desired, sprinkle Italian bread crumbs on top of each serving.
