You just have to cut the boneless, skinless chicken into bite size pieces, throw everything, except the bacon used at the end, into a bowl and stir until well combined. Spread the mixture out in the insert of your slow cooker, and you are ready to let the slow cooker do its work!

I made this recipe without cooking the pasta first, because that is how most of our readers request the recipes to be. While it is nice to not have the extra step and extra dishes from cooking the pasta separately, there is a small trade off. The trade off is that you will want to stir this more often than you normally would with a crock pot recipe. You will also want to keep a really close eye on this the first time you make it, so you can know how long it takes in your specific slow cooker to cook the rotini to your preferred tenderness.

Ingredients Needed

  • 2 lbs boneless, skinless chicken, cut into cubes
  • 2 cups uncooked rotini
  • 10.5 oz can cream of mushroom soup
  • 10.5 oz can cream of chicken soup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 cup soup cream
  • 2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked crisp and crumbled

  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring halfway through the cooking time

  • Cut 2 lbs boneless skinless chicken into bite size cubes and place them in a large mixing bowl.
  • Add 2 cups uncooked rotini, 10.5 oz can cream of chicken soup, 10.5 oz Can Cream of Mushroom Soup, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/8 teaspoon ground black pepper, 1/4 teaspoon salt, 1/2 cup sour cream and 2 cups shredded cheddar cheese to the large mixing bowl and stir until well combined.
  • Spread mixture in lightly greased 6 Quart Slow Cooker or a 3.5 Quart Casserole Crock Pot, making sure the rotini is all pushed down into the liquid.
  • Cover and cook on low for 4-4.5 hours or high for 2 hours to 2 hours and 15 minutes, stirring once or twice through the cooking time.
  • Once your chicken and rotini are cooked, sprinkle 6 slices bacon, cooked crisply and crumbled evenly across the top and serve.
