If you are new around here, you may not know that I am a huge fan of easy recipes that taste great. Those two qualities are what I had in mind when I started creating this Crock Pot Italian Style Gnocchi Soup recipe. It can be thrown together very quickly, especially if you fry your Italian sausage ahead of time. After the Italian sausage is cooked, this recipe is a dump and go recipe, which I love.

This simple recipe is great for when you just want a delicious soup without a lot of fuss. In my home, it was an instant family favorite. The ingredients just come together so well to give you a flavorful soup that is filling but not heavy. It is perfect for any time of year. Busy summer or spring day? This soup is a great choice. Needing some comfort food in fall or winter? I recommend this soup. It is just that good.

What You Will Need for Crock Pot Italian Style Gnocchi Soup

Ingredients Needed

  • 1 lb ground Italian sausage, browned and drained
  • 14.5 oz can diced tomatoes, undrained
  • 10 oz jar basil pesto
  • 16 oz package Italian gnocchi
  • 3 cups beef broth

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 1 hour to 1 hour and 20 minutes on high, stirring once or twice to make sure the gnocchi cooks evenly

Ingredients

Instructions

  • Brown and drain 1 lb ground Italian sausage.
  • While your sausage is browning, put 15 oz can diced tomatoes (undrained), 10 oz basil pesto, 16 oz Italian gnocchi and 3 cups beef broth in a 4 Quart Slow Cooker.
  • Add your cooked Italian sausage and stir.
  • Cover and cook in high for 1 hour to 1 hour and 20 minutes, stirring twice to help the gnocchi to cook evenly.
  • Serve with Shredded Parmesan Cheese sprinkled on top.

    A vegetarian version could be completely dump and go….for a vegetarian version you could drain a large can of cannelini beans in place of the meat. ๐Ÿ™‚
