Ingredients

  • 16 oz potato gnocchi
  • 8 oz Grape Tomatoes
  • 12 oz tub Fresh Mozzarella Salad divided
  • Salt and Pepper to taste

Instructions

  • Place your grape tomatoes and gnocchi in a 2.5 quart slow cooker.
  • Place the mozzarella balls from the tub of Fresh Mozzarella Salad in bowl, set aside, pour the marinade from the tub over everything in your slow cooker and salt and pepper to taste. (Place your mozzarella balls back in the tub, put the lid on the tub and place the tub in your refrigerator until you need to use it at the end.)
  • Using a stirring spatula, gently toss your grape tomatoes and gnocchi until they are completely coated by the marinade.
  • Cover and cook on high for about 1 hour, gently stirring occasionally so that none of your gnocchi gets hard spots.
  • Add your mozzarella balls, stir until well combined, cover and cook for an additional 5 minutes, until your mozzarella is melted.
  • Stir in your melted mozzarella with the rest of your ingredients.
