Slice 1 yellow onion and place the rings in the bottom of a 6 Quart Slow Cooker.
Place the 2.5 lb Pork Loin Roast on top of the onion slices.
In a medium mixing bowl, stir together 1 Cup Hot Water, 1/4 Cup Sugar, 2 Tbsp Red Wine Vinegar, 2 Tbsp Soy Sauce, 1 Tbsp Ketchup, Salt and Pepper (to taste), 1/4 tsp Garlic Powder and a Splash of Hot Sauce until well combined.
Cover and cook on low for 4-6 hours. (If you want it sliceable, you will want to remove it from the insert as soon as the internal temperature reaches 145 degrees, let it rest for a few minutes, slice it and return to cooking juices with the insert removed from the unit. Mine was perfect in about 4.5 hours. )
