Place your washed 24 oz bite size potatoes in the bottom of a 6 quart slow cooker.
Mix together your melted 1/2 cup Butter, 1/4 cup extra virgin olive oil, 1 tablespoon Fresh Rosemary, minced, 3 tablespoons fresh parsley, minced, 1 tablespoon fresh sage, minced, 1/2 teaspoon onion powder and 2 cloves garlic, minced, in small bowl.
Salt and pepper your potatoes to taste.
Pour about 1/3 of your herb mixture over your potatoes.
Lay your 2 lbs boneless skinless chicken thighs on top of everything and Salt and Pepper to taste.
Pour the remaining herb mixture evenly over your chicken.
Cover and cook 5 to 7 hours on low or 2 hours and 30 minutes to 3 hours and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly. It is done when the center of your chicken reaches at least 165 degrees Fahrenheit and your potatoes reach desired tenderness.
