I can’t take credit for this recipe. Cris came up with the recipe for this Fresh Herb Crock Pot Chicken and Potatoes using the herbs she has been growing. Once she tried it, she told me that I had to try it, and I am very glad she did! It is delicious!

In the recipe, you will see the fresh herbs I used listed in the ingredients. You don’t have to use the herbs I used. If you have a different fresh herb combination that you love, you can totally use that instead. If you don’t have fresh herbs available, no worries! You can use dried herbs by dividing the measurement called for when using fresh herbs by three. For example, if it is 1 tablespoon of fresh herbs, you will use 1 teaspoon of dried herbs since there are 3 teaspoons in 1 tablespoon. If the recipe calls for 3 tablespoons of fresh herbs, then you will use 1 tablespoon of dried herbs. I hope that helps so that everyone can enjoy this amazing recipe.

What You Will Need for Fresh Herb Crock Pot Chicken and Potatoes

Ingredients Needed

  • 2 lbs boneless, skinless chicken thighs (If you prefer white meat, you can use chicken breasts of the same weight and cut them into thigh size pieces.)
  • 24 oz bag bite size potatoes, rinsed (I have also seen these labeled as baby potatoes and petite potatoes.)
  • 1 tablespoon fresh rosemary, minced
  • 3 tablespoons fresh parsley, minced
  • 1 tablespoon fresh thyme, minced
  • 1 tablespoon fresh sage, minced
  • 1/2 teaspoon onion powder
  • 2 cloves garlic, minced
  • 1/2 cup butter, melted
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Time Needed

  • Prep Time: 15 minutes or less
  • Cooking Time: 5 to 7 hours on low or 2 hours and 30 minutes to 3 hours and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly

  • Place your washed 24 oz bite size potatoes in the bottom of a 6 quart slow cooker.
  • Mix together your melted 1/2 cup Butter, 1/4 cup extra virgin olive oil, 1 tablespoon Fresh Rosemary, minced, 3 tablespoons fresh parsley, minced, 1 tablespoon fresh sage, minced, 1/2 teaspoon onion powder and 2 cloves garlic, minced, in small bowl.
  • Salt and pepper your potatoes to taste.
  • Pour about 1/3 of your herb mixture over your potatoes.
  • Lay your 2 lbs boneless skinless chicken thighs on top of everything and Salt and Pepper to taste.
  • Pour the remaining herb mixture evenly over your chicken.
  • Cover and cook 5 to 7 hours on low or 2 hours and 30 minutes to 3 hours and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly. It is done when the center of your chicken reaches at least 165 degrees Fahrenheit and your potatoes reach desired tenderness.
