How to Make Simple Chicken Tacos in a Crock Pot

When I say these Simple Crock Pot Chicken Tacos are simple, I mean it to the extreme. This is a true dump and go recipe that is flavorful and filling! It is so good that you will wish you had leftovers if you eat it all the first night.
This version of this recipe is only slightly different than the original. I wanted to give it a try with chicken thighs since we prefer dark meat around here, and the original recipe used chicken breasts. I also wanted to try not rinsing the beans. Even though I was really tempted to not even drain them, I ultimately decided against it so there wasn’t too much liquid in the end dish. Whether you make the original version of this recipe or this version, I hope you love it just as much as my family and I do!

What You Will Need for Simple Crock Pot Chicken Tacos
Ingredients Needed
- 2.5 lbs boneless, skinless chicken thighs (If you want to use chicken breasts, you can find that recipe here.)
- 1 packet taco seasoning
- 20 oz diced tomatoes with chilies, undrained (2 – 10 oz cans)
- 15 oz can black beans, drained but not rinsed
- Tortilla shells
- Your favorite taco toppings
Equipment Needed
- Can opener
- Can colander
- 6 Quart Crock Pot
- Large bowl (Optional…you can shred your chicken in your slow cooker, if you prefer.)
- Two forks
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 5 to 6 hours on low or 2 hours and 30 minutes to 3 hours on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly
- Additional Time: 5 minutes (to shred your chicken with two forks)

Simple Crock Pot Chicken Tacos
Ingredients
- 2.5 lbs boneless skinless chicken thighs
- 1 pkg of taco seasoning
- 20 oz diced tomatoes with chilies undrained (2 – 10 oz cans)
- 15 oz can of black beans drained, but not rinsed
- tortillas
- favorite taco toppings
Instructions
- Place the 2.5 lbs boneless skinless chicken thighs in a 6 quart crock pot.
- Sprinkle your 1 pkg of taco seasoning over chicken.
- Pour the undrained 20 oz diced tomatoes with chilies over chicken.
- Rinse the 15 oz can of black beans, then add them on top.
- Cover and cook on low for 5-6 hours or high for 2.5-3 hours,
- Place chicken in a large bowl to shred with two forks or shred with two forks in your slow cooker, whichever you prefer.
- Stir chicken back in with everything.
- Serve on tortillas with favorite taco toppings.
