In a 6 Quart Crock Pot, mix together 32 oz frozen diced potatoes, 1 lb ground turkey (browned and drained), 1 cup real bacon bits, 3/4 cup diced white onion1 cup water and 32 oz beef broth.
Cover and cook on low for 5-6 hours or high for 2.5-3 hours.
Mix together 3 tablespoons all-purpose flour, salt and pepper and 1 cup milk in a bowl and pour into your crock pot.
Cover and cook on high for 20-30 mins, until your soup has thickened to desired consistency.
Sprinkle 4 cups Cheddar cheese on top of your soup and stir until your cheese melted. (The cheese will thicken up the soup, so you can less cheese if you would like the soup to not thicken up as much.)
