The theme of this Ground Turkey Crock Pot Bacon Potato Soup is lower cost at the grocery store without sacrificing taste. I have used ground turkey as a replacement for ground beef when cooking before. It works great in some recipes and is not my favorite in others. So, I thought I would try it in this recipe, and it was great! Another way I am cutting costs is by using real bacon bits instead of cooking bacon crisply and crumbling it. I can buy a large bacon of store brand real bacon bits and use it in multiple recipes for less than a pound of bacon.

What You Need for Ground Turkey Crock Pot Bacon Potato Soup

Ingredients Needed

  • 32 oz bag frozen diced potatoes, kept frozen
  • 1 lb ground turkey, browned and drained
  • 1 cup real bacon bits
  • 3/4 cup white onion, diced
  • 4 cups beef broth (32 oz carton)
  • 1 cup water
  • 3 tablespoons all purpose flour
  • Salt and pepper to taste
  • 1 cup milk
  • 4 cups shredded cheddar cheese

  • Prep Time: 10 minutes
  • Cooking Time: 5 to 6 hours on low or 2 hours and 30 minutes to 3 hours on high, stirring halfway through the cooking time, if possible, to help everything cook evenly

  • In a 6 Quart Crock Pot, mix together 32 oz frozen diced potatoes, 1 lb ground turkey (browned and drained), 1 cup real bacon bits, 3/4 cup diced white onion1 cup water and 32 oz beef broth.
  • Cover and cook on low for 5-6 hours or high for 2.5-3 hours.
  • Mix together 3 tablespoons all-purpose flour, salt and pepper and 1 cup milk in a bowl and pour into your crock pot.
  • Cover and cook on high for 20-30 mins, until your soup has thickened to desired consistency.
  • Sprinkle 4 cups Cheddar cheese on top of your soup and stir until your cheese melted. (The cheese will thicken up the soup, so you can less cheese if you would like the soup to not thicken up as much.)
