Layer half of 28 oz smoked sausage (sliced) in the bottom of a 6 quart crock pot.
Top with half of 4 medium Russet Potatoes (peeled and sliced thinly) and half of 1/2 medium white onion (sliced).
Place half of 10 slices American cheese on top (tear your pieces to fit on one layer).
Repeat layering.
Spread 10.5 oz can cream of celery soup over everything.
Cover and cook on low for 6 hours or on high for 3 hours (the potatoes should be tender and the cheese bubbly), rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly.
